It’s just sad that despite all the good intentions, many parents today become frustrated from failure to get their children to actually eat what they painstakingly prepare for packed lunch. So, here are some easy but healthy recipes that both kids and adults love to sink their teeth into:

For those picky ones who love fried crunchy food and refuse to eat vegetables, this homemade recipe can pass off as a restaurant delicacy if done properly. Take note that this recipe uses canola oil, which is one of the healthiest types of cooking oils and contains heart-healthy monounsaturated fats.

For the Chicken Poppers:

  • 1 cup carrots, peeled and grated
  • 2 cups chicken, ground
  • 1 tbsp garlic, chopped
  • 1 tbsp onions, chopped
  • 1 cup flour
  • 1 cup bread crumbs
  • 2 medium-sized eggs
  • Canola oil for frying

Preparation:

  1. Mix ground chicken, carrots, onions, and garlic in a bowl. Once mixed, get a tablespoonful of the mixture and shape into balls, about 1 inch in diameter. Set aside. You may actually prepare this the night before and place mixture inside the refrigerator. Bring out to thaw only when you plan to cook.
  2. The breading: in separate bowls, prepare flour, bread crumbs, and beaten eggs. Add a pinch of salt and pepper into each bowl.
  3. To cook, heat oil in a frying pan. When hot enough to fry, place coated chicken ball one by one into the oil and fry for about 5 minutes or until breading turns golden brown.

For the healthy rice:

  • 1 medium onion, chopped
  • 1 tbsp red bell pepper, sliced
  • 1 tbsp green bell pepper, sliced
  • 1 tsp butter
  • ½ cup carrots, diced
  • 1 cup uncooked rice
  • 1 and ½ cup water
  • Salt and pepper to taste

Preparation:

  1. For the healthy rice, sauté the onions, red, and green bell peppers in butter.
  2. Add diced carrots. When carrots are about to be cooked, pour in uncooked rice and water.
  3. Stir and boil for about 20 to 25 minutes until rice is cooked.
